It very much depends on the build and not only the class. For example power holo sword having skill floor 2/5 and skill ceiling 4/5. Condo holo having skill floor 4/5 and skill ceiling 5/5. There are also other points like boon reliance. Power holo has 3/5 and condi holo has 5/5.

Engineer most likely due to flavor and playstyle, and Rev because you needed to buy heart of thorns. Now that mechanist is a thing, I highly doubt engineer is the least played.
Only reason is you don't have multiple alts at 80 and don't want to level any more to 80. But if you do, t's easier to spread your crafting disciplines amongst them. 2 per alt over 4 alts, or less with the crafting expander on the gem store (3 crafting disciplines per character).

Crafting professions costs money to buy ingredients but can give 7 levels each grinding it out to max, 2 professions per character. Story is poor xp but you can skip cutscenes and run straight to map markers to speed them up, completing them is needed to unlock masteries such as autoloot which is huge for convenience.
One of the things I really enjoy about Guild Wars 2 is the sheer amount of horizontal progression this game offers. It's one of the few games where you can truly make your profession and build your own. There are so many options for customization from your profession, specializations, traits, weapons, sigils, runes, food, etc. I love it all.
As a rule, Tankers are justified to heavy armor. That being said it might be too strong for Reapers to have high hit points for being necro + the shroud midpoints + heavy armor. Reapers in Guild Wars 2 are certainly maximum damage output driven. GW2 Reapers may be like D&D Barbarians, wielding great swords, high damage, high hitpoints, light armor.

First you can play all professions in every gamemode. The important part is your build/gear and not the profession. At the end you will multiclass anyway, if you want to do best in each gamemode.
