You need to manually evade and block/parry every attack, so if someone is behind you, you can no longer just press a button and rely on the game to quickly turn your character around. This makes scenarios where you are fighting multiple enemies, tricky. Which is why IMO stealth is more important than ever.
The one thing I'll say for the default scheme is that it makes it slightly easier to hold down the heavy attack to charge it while dodging around at the same time. When you see the enemy getting ready to swing, hit the parry button, which is E on kb/m. Not much too it. Now, not every shield parries probably, so if you're using a BIG shield it may not parry, I don't know I only use the small round ones. Parrying is VERY useful though on tougher enemies.
AC 2 is still my favorite lol. Also, I watched a video that stated you can still do one-hit counter kills. Dude was literally just standing there parrying and one-hitting folks like I did in AC 2 lol. I'm actually pretty excited for this. The RPG games were just too much for me. I finished Origins, but barely played Odyssey and Valhalla.

The biggest problem you're going to have if you start with Origins and like it so much you want to go back and play the old ones, is that Origins plays completely different than any other AC in the series. It's an RPG, every other AC game is an Action game.

Pretty sure dodging doesn’t cost energy in origins. Also got this sleep effect spear that was incredible Bows can be used to cheese enemies you can’t beat Sometimes if you’re stuck you can look at the map. If you have online access a lot of times people will have posted a screenshot at whatever key locations parrying is great if you can pull it off, even more so with a shield that gives a bonus on a successful parry (i. e. "Health on Parry" of the Reinforced Shield). But the time-window for a successful parry in Origins is very small.
Basically you can just take on 20 people at once like you could in the previous games, easily dodge, block, parry every attack thrown at you with ease. In this AC the combats more technical and you have to take your time with it. Hope this helps!

BTW, any weapon melee with fire damage is great too, they deal huge damage, however, it's hard to control the falme and you could get yourself caught up on it too.
